A Nod to the Waffle
Aug 25th 2017
Waffles continue to be a very popular menu item in many countries – Are they on your menu?
The warm waffle, with a history dating back to the Medieval days, continues to be one of the most popular North American dishes for breakfast- and not uncommon to find on lunch and dinner menus as well. What’s on your menu? ~ Rich, dense Liege waffles, Thick, crisp Belgium waffles, Crunchy and buttery Galettes, Light and crispy Gofri, Yolky flavored Hong Kong ‘grid cakes’, Springy green colored Pandan waffles or Scandinavian styles ? And, I must include my favorite use of my waffle maker. The stuffing waffle. Recently discovered via my love of recipe surfing and Pinterest sharing, I created waffles to serve as a base for my leftover Thanksgiving turkey and gravy. Using a traditional stuffing mixture, with dash of extra broth, the waffle maker was the perfect equipment to make a crispy exterior, soft interior ‘stuffing waffle’. Although waffles differ in ingredients and varieties, one of the most important parts of creating this perfect crowd-pleaser in the commercial or home kitchen, is having the right equipment to cook them.
Globe Equipment Company, serving the commercial food industry since 1938, suggests the following models to make the perfect waffles:
The Waring WWD180 Single Classic Waffle Maker is an ideal solution if you’re in need of a unit to support a medium volume breakfast operation. This commercial unit can produce up to 30 classic waffles (1” thick) per hour. It features an adjustable temperature control for flexibility in cooking batters of a variety of thicknesses. The heating elements are embedded into the plates for precise temperature control and even heat distribution to produce picture-perfect waffles. Its triple-coated non-stick plates allow for easy removal of the waffles and these, as well as the removable dishwasher-safe drip tray, make it easy-to-clean so your staff is able to make most efficient use of their time. The power on and ready indicator lights, as well as the audio beeps, help your staff manage their workload during the busiest hours of operation.
The Waring WW250BX Double Belgian Waffle Maker will produce between 50 to 60 waffles per hour. The non-stick cooking surface insures easy removal of the cooked waffle. The rotary feature ensures even baking and browning. It has all the features of its sister single unit mentioned above with twice the output volume.
Star’s SWBD Double 7″ Standard Waffle Bakers are built of polished stainless steel with heavy-duty cast aluminum grids and feature a heavy-duty aluminum hinge. From cafes to coffee shops to full service restaurants, waffles are a crowd favorite. LED display and electronic audible alarm makes working with this unit a breeze.
Top it off!
There is sweet, there is savory. The accompaniments to waffles are really endless; berries, blue cheese, jams, sugar, peanut butter, syrups, chocolates, and butter to name a few. There is no easier way to top a waffle than with a blast of freshly made whipped cream. The iSi 163001 Cream Profi Whip is a hand held whipper known as the cream specialist. This professional tool replaces those disposable cans of ‘not so true’ whipped cream. It yields up to twice the amount of other whipped methods. iSi combines the perfection of science, via cream chargers, to your fresh ingredients in the stainless steel bottle and changes them into delightful, perfect whipped cream. Get creative and experiment with flavors. You will be impressed at the outcome, as will your customers!
With the hint of fall around the corner, here is a idea from the makers of iSi for a cinnamon cream whip.
Its decadent touch of sweetness will please any palate, bringing with it the feeling of falling leaves.
Cinnamon Cream
Ingredients for 1 pint Creative Whip:
2 cups chilled heavy cream & 1/4 cup cinnamon syrup
To make: Pour both ingredients into a 1 pint iSi Creative Whip. Screw on one iSi cream charger and shake vigorously 3 to 5 times, depending on desired consistency. Use immediately or refrigerate for up to 10 days until needed. This cream is ideal to use as a coffee topping. Try it with cinnamon vanilla cream- just substitute vanilla syrup for half of the cinnamon syrup and proceed as above.
No matter your flavor choice or specialties on your menu, Globe Equipment Company gives a well-deserved nod to the waffle!
