The capacities listed in the name of each mixer we sell indicates bowl size. But bowl size does not indicate absolute capacity for every recipe. Your mixer's capacity for your application will depend on what you're mixing.

Some Factors that Might Affect Your Mixer Choice
All the mixers on this page are planetary, gear-driven mixers.
- For heavy dough usage, see spiral mixers here, and pizza/heavy dough mixers here. Choose spiral for high output artisanal and high-volume dough recipes where gluten development is key, and pizza mixers for high-volume, heavy dough operations.
- If you need a countertop mixer, but you want front-mounted controls or a timer, choose the SP08. It has the controls on the front and a 15 minute digital timer you can see across the room. The SP05 does not.
- All globe planetary mixers 10-qt. and larger including touch pad electronic controls, last batch recall, and a 60-minute LED timer.
- If you need a power bowl lift, choose the SP80PL (or the SP62P). It is only available on those models.
- A correctional package is available for the SP10-SP80PL. If you'll be using the mixer in a correctional facility, please call us for this option.
- If you need attachments to turn your mixer into a shredder, slicer, or food processor, choose the SP10 or above. Those mixers have a standard #12 hub attachment. The SP05 has a #10 non-standard hub (with fewer attachments to choose from), and the SP08 does not have a hub.
