Senior Living System Improves Foodservice Output and Lowers Equipment Costs Through Globe’s Consultive Process

The Client:
Covenant Living, a Senior Living System with locations nationwide

The Project:
Full foodservice operations buildouts for new residential buildings (including coffee bars, bistros, and kitchens in facilities serving hundreds of residents each)

The Needs:

  • Kitchen equipment consultation and procurement
  • Delivery and installation services
  • Custom fabricated equipment and chef's lines

The Results:

  • Kitchens ready to produce high-quality food quickly and reduce stress on internal employees
  • More varied menu items with less equipment than was used in prior facility buildouts within the same system
  • Reduced equipment costs through Value Engineering and other measures
  • On-time deliveries that fit the GCs’ schedules

The Story:
Covenant Living approached Globe to bid on a kitchen equipment procurement project for one of their new facilities.

We could have just put in a bid for all the specified equipment.If we won the bid, we would have delivered it according to the general contractor’s schedules.The project could have ended there.

However, that’s not the type of long-term relationship we’re looking to build.

Our team met with one of the organization’s executives (Randy Gross, Vice President of Project Development) to review their needs against the specifications they had, and make sure that the equipment worked for each individual location.

We found a number of opportunities for optimization, and achieved significant savings by:

  • Discussing and refining plans for practicality in individual locations versus original designer specs
  • Eliminating features that were originally specified, but unnecessary once considered in terms of everyday use
  • Value Engineering, including reducing the total number of manufacturers used to leverage volume for better pricing and create fewer points of contact for maintenance and service needs

With a revised plan in place, we delivered the equipment on time, according to the General Contractor’s timeline.We have done (and continue to do) the same for additional locations and facilities.

Savings vary per location because of their unique needs, but we saved Covenant Living over $100,000 on a single location via this process.
