Choose a griddle with manual controls if you’re cooking a variety of foods at different temperatures on different parts of the grill.
Choose a griddle with thermostatic controls if you want to set a designated temperature. If you put something on the griddle and it changes temperature, it will automatically recover. This is great for cooking large quantities of a single product, especially from frozen.
The thicker the griddle plate, the better it will retain heat and keep its temperature, which is important especially if you are cooking product from frozen.
